How to make Shepherds Pie

SHEPHERDS PIE RECIPE: EASY STEPS
Shepherds pie and Cottage pie are traditional methods for using leftover roasted meat with mashed potato as pie crust. The use of uncooked meat such as mince meat is a fairly recent adaptation. While a variety of meats can be used for this dish, it is traditionally made from beef or lamb with the lamb version being known as shepherd's pie and the beef version known as cottage pie. Below is my favourite recipe for shepherd's pie. To make a cottage pie simply substitute the minced lamb with minced beef.

Shepherds Pie Ingredients
- 1 onion, diced
- 1 tablespoon olive oil
- 1 lb. (450-500g) lamb, minced
- 1 clove garlic, crushed
- 1 large carrot, diced
- 1 beef stock cube
- 1 lb. (450-500g) chopped tomatoes
- 1 tablespoon corn flour
- 3 tablespoons tomato puree
- pinch of salt and pepper
- 2 (900g) potatoes
- 1 stick butter

Step 1
Heat the olive oil in a pan, add the onion, garlic and carrot and cook until soft.
Step 2
Add minced lamb and stock cube, then cook until the mince is brown and shows a crumbly texture.
Step 3
Stir in the tomatoes and tomato puree, and add the corn flour.
Step 4
Leave to simmer, stirring occasionally, for about fifteen minutes, or until thickened.
Step 5
Peel and chop potatoes and boil until soft, then mash them with the butter and salt and pepper to taste.
Step 6
Put the filling into a deep dish, then top with the mashed potatoes and put under a warm grill (broiler) until the top is brown and crisp.
Step 7
Top with melted cheese if desired.
