How to make Chicken Crockpot meals: Chicken Crockpot recipes and tips


CHICKEN CROCKPOT BENEFITS
1) The crock pot offers "all-day cooking without looking." Most meat and vegetable combinations can cook for 8 to 10 hours unattended.
2) Food doesn't overcook or burn if left longer than required. Food cooked slowly will be more tender after prolonged cooking. Liquids do not boil away as in conventional methods of cooking.
3) One-step preparation is convenient. Simply put all ingredients in the crock and cook. Exception would be adding milk, cream or sour cream during the last hour.
4) Simmered foods taste better than boiled foods because more natural juices and flavours of food are retained. Keep the cover
on!!! Every time the lid is lifted, add 15-20 minutes to the overall cooking time.
5) The crock pot is economical to operate. Low wattage over an extended period costs less than high wattage for a short time.
6) A wide variety of foods can be prepared. Less tender cuts of meat cook with less shrinkage and therefore, are moist and tender.
7) Food is heated, but not the kitchen. Clean up is simple if the crock pot is stoneware and is removable.

CHICKEN CROCKPOT RECIPES

1. Chicken & Vegetables Crockpot recipe

Chicken & Vegetables Ingredients:
- 550 g Skinless chicken thighs or drumsticks
- 4 -5 Medium potatoes, cut bite size
- 4 medium carrots, cut bite size
- 1 large chopped onion
- 2 cups hot water
- 1 tbsp chicken stock powder
- 1 tsp salt
- ½ tsp pepper
- ¼ tsp thyme
- ½ tsp liquid gravy browner

Step 1
Place layers of potato, carrots, and onion in slow cooker - Place chicken thighs on top of vegetables
Step 2
Stir remaining ingredients together in bowl - Pour over chicken
Step 3
Cover, cook on Low for 9-10 hours or on High for 4½-5 hours in a crockpot/ slow cooker

2. Chicken Curry Crockpot recipe

Chicken Curry Ingredients:
- 6 boneless, skinless chicken breasts, cut into 2" pieces
- 2 onions, chopped
- 2 cloves garlic, minced
- 9 oz. jar mango chutney
- 2/3 cup water
- 2 Tbsp. cornstarch
- 1 Tbsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup frozen baby peas

Step 1
Combine chicken, onions, and garlic in a 3-4 quart crockpot
Step 2
In medium bowl, combine chutney, water, cornstarch, curry powder, salt and pepper, and mix well
Step 3
Pour over chicken and onions in the crockpot
Step 4
Cover crockpot and cook on LOW for 5 to 7 hours until chicken is thoroughly cooked and no longer pink in center. Turn crockpot to high and add bell peppers and peas.
Step 5
Cover crockpot and cook for 20-30 minutes until vegetables are tender. 4-6 servings

3. Chicken Cattiatore Crockpot recipe

Chicken Cattiatore Ingredients:
- 1kg of chicken (breast, thigh or marylands – whatever you prefer)
- 1 tin of crushed tomatoes
- 1 cup of mushrooms (I usually add more I love mushrooms!)
- 1 onion – diced
- 2 cloves of garlic
- Kalmata olives (optional – around a cup but I don’t use them)
- Juice of one lemon
- Tomato paste
- Parsley – chopped
- Salt & pepper to taste

Step 1
Put everything into the slow cooker and mix well
Step 2
Cover, cook on Low for 8 - 9 hours or on High for 4-5 hours in a crockpot/ slow cooker
Step 3
Serve over rice or potatoes

4. Creamy Chicken Casserole Crockpot recipe

Creamy Chicken Casserole Ingredients:
- 1 onion
- 4 rashers bacon
- 125g mushrooms
- 1 & 1/2 kg chicken (I find thigh fillets are good if using slow cooker. Breast fillets dry out too much)
- 2 tablespoons flour
- 3 tablespoons butter
- 1 can mushroom soup
- 60ml water
- 40ml cream optional
- Salt & pepper

Step 1
Peel and chop onion finely, chop bacon & mushrooms
Step 2
Cube chicken and coat with flour season with S&P
Step 3
Saute onion, bacon & mushroom
Step 4
Add to chicken, pour in soup and water - stir well
Step 5
Cover casserole dish in slow cooker approx 6 hours
Step 6
Stir in cream and garnish with parsley
