GUACAMOLE RECIPE
Of Aztec origin, it was originally valued for its high fat and vitamin content. Guacamole was originally made by mashing the avocado with a molcajete (a type of mortar and pestle) and adding tomatoes and salt. Below is my favourite modern Guacamole recipe.
Guacamole Ingredients
- 4 large ripe avocados, flesh removed
- 2 tbsp lime or lemon juice
- 2 tomatoes, seeds removed, finely chopped
- 1 handful coriander leaves, chopped
- 1 small garlic clove, crushed
- 1/4 tsp chilli powder
- Salt and pepper to taste
Step 1
In a bowl, mash avocados with a fork, until you reach a smooth texture
Step 2
Combine all the remaining ingredients together into the bowl and mix well
Step 3
Serve with corn chips to accompany Mexican dishes
Quick tips
- Guacamole will keep, covered, in the fridge for up to 3 days.
- Variation: For a creamier taste, add 1/4 cup sour cream.
